- Peel and chop your onion, garlic and ginger.
- Heat 1 tbsp of coconut oil or ¼ cup of water in a large pot then add the onions, garlic and ginger. Cook for a couple of minutes until soft.
- Add in all your spices, Turmeric Superfood Blend and some salt and cook for a couple more minutes until fragrant.
- Add in your dry lentils, vegetable stock and passata and bring to a boil.
- Lower the heat and leave to simmer for 15 minutes, stirring occasionally.
- Add in your yoghurt and spinach, cover and leave for another 5 minutes.
- Add salt to taste and serve with rice, fresh lime juice and coriander.
