Deliciously indulgent chocolate cookies with a rich gooey centre. Make them with our new delicious Yacon sweetened Cacao Nibs for extra crunchiness and energy & immunity supporting copper and magnesium!
Ingredients
- 200g Naturya Cold Pressed Coconut Oil
- 225g Coconut Sugar
- 2 tbsp Naturya Chia Seeds
- 175g plain flour (gluten-free)
- 175g Naturya Cacao powder
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
- 75g Naturya Yacon sweetened Cacao Nibs
- 85g almond butter
- 85g Naturya Cacao powder
- 3 tbsp agave syrup
Method
- Place the Chia Seeds in a bowl with 8 tbsps of water
- Stir well and leave for 10 minutes until the mixture has thickened up
- Combine the Coconut Oil and coconut sugar in a blender (or by hand) and then stir in the chia mixture
- Add the dry ingredients and blend to combine
- Place the cookie dough in the fridge for 1 hour
- Meanwhile make the stuffing by combining almond butter with the equivalent amount of Cacao powder and agave syrup. If the mixture is too thick, add water to loosen
- Take a golf ball sized lump of cookie dough and flatten slightly
- Place a teaspoonful of the stuffing in the centre and then fold up the sides of the dough to enclose the stuffing
- Repeat until you have used up all of the dough
- Place on a baking tray covered in greaseproof baking paper and bake for 9-12min on 170°C
