These healthy Carrot Cake-inspired Energy Balls are a fun, nutritious twist on a classic. They’re packed with Naturya Chia Seeds, grated carrots, and coconut, offering a healthy yet sweet snack that’s easy to make and requires no baking.
Ingredients
- For the bites
- 2 tbsp Naturya Chia Seeds
- 200g Grated Carrots (about 2 medium-sized carrots)
- 50g Rolled Oats
- 50g Shredded Coconut (unsweetened)
- 60g Almond Butter (or any nut butter)
- 60g Maple Syrup (or honey)
- 1 tsp Ground Cinnamon
- 1/2 tsp Ground Nutmeg
- 1/4 tsp Ground Ginger
- Pinch of Salt
- 30g Chopped Walnuts (optional, for texture)
- 30g Raisins or Dried Apricots, chopped (optional, for sweetness)
- For the Coating (Optional):
- 30g Shredded Coconut (to roll the bites in)
Method
1. Prepare the Base:
- In a large mixing bowl, combine grated carrots, rolled oats, shredded coconut, and Naturya Chia Seeds. Stir until well combined.
- Add the almond butter, maple syrup, ground cinnamon, ground nutmeg, ground ginger, and a pinch of salt. Mix everything together until the mixture becomes sticky and holds together. If it feels too dry, add a little more maple syrup or a splash of water to help bring it together.
- Gently fold in the chopped walnuts and raisins or dried apricots (if using) for extra texture and natural sweetness.
2. Shape the Energy Bites:
- Using your hands, take small portions of the mixture and roll them into bite-sized balls, about 2.5 cm in diameter.
- If you’d like, roll the bites in some extra shredded coconut to give them a decorative and coconutty coating.
3. Chill:
- Place the energy bites on a baking tray or plate lined with parchment paper.
- Refrigerate for at least 30 minutes to allow them to firm up and set.
